Gluten Free and Eggless Recipes (Bread, Doughnut and Cookies)

Hello. I'm sharing 3 recipes here. Mostly to park them here in case I ever lose them, but also in case someone wants to try out gluten-free recipes for the first time and is looking for tried and tested recipes.

I haven't posted anything for almost 2 years. Last year was a bit of a challenge for me. My daughter suffered some horrid rashes on her legs and other parts of her body. When we finally did an IgE blood test, we found she had 6 allergies. It was tough. So I ended up trying a lot of gluten-free, egg-free, soy-free and nut-free recipes.

Recently, we tested again. I was hoping that her food allergies would be over after a year of abstinence. It wasn't so. But it wasn't all bad. She tested negative for egg and soy allergy so that was a relief. Her antibody levels for wheat and nuts were lower but still positive. 

So it looks like I still have to continue making gluten-free food for her. I've decided to post some here for safe-keeping and for sharing.


1. Gluten-free bread



The first thing I had to try making was a gluten-free bread. Prior to this, I was making sourdough bread about twice a week. Now I had to take on a new challenge and try something different. I tried several recipes at first with epic failures. Later, I bought this magical ingredient called psyllium husk powder. It mixes with water to form a gelatinous mass and give the dough structure without gluten. Don't expect a dough like normal bread though. You'll get something like a sticky and thick batter.


You pour this batter or dough into a bread pan and you'll have to flatten the top with wet fingers. You can also use a wet metal spoon or spatula.



It may look a bit funny at this point but after proofing and baking, you'll get something that very much resembles an ordinary bread. My family members approve of this recipe and they don't find it to taste really different from the usual bread.

2. Gluten-free doughnuts



This is a good one. Most other recipes are the batter type which are baked in a doughnut molds. This one uses yeast and the doughnuts are fried rather than baked. I made these for my daughter's birthday and everyone said they were very good.


I modified the recipe from the original, as I did with the other recipes too. Here it is:




3. Gluten-free Chocolate Chip Cookies

This is THE best chocolate chip cookies. It's made without eggs, but the cookie dough is so smooth and easy to work with. Most importantly, they taste great and the family loves it.


This is a small batch recipe. You may double or triple the recipe if you want to make more.

White almond cookies

Tomorrow is Chinese New Year. I should be busy getting ready, really. So this will be a quick short post.

Last year, I share the recipe for peanut cookies. Yesterday, I made these cookies. I couldn't help doing some last minute baking.



To be honest, they look great and taste okay but they're not as melt-in-the-mouth as I expected them to be. Perhaps I shouldn't have added the extra oil, but the dough was way too dry and crumbly to handle otherwise.

Valentine's Cookies

Finally, an up-to-date blog post from me. It hasn't been easy though. The first batch of dough was wrong because I copied the recipe incorrectly. Then the camera battery was out. And then, all the photos I took was corrupt and I couldn't download them! I couldn't believe it at first, but it happened, and then it occured to me that it's Friday 13th! Gosh!

Nonetheless, it's Valentine's Day tomorrow, so I took a few pictures again. I was able to download them the second time around, thankfully.

These are basic cookies. Even though they're quite simple to make and the recipe can be easily found, I do have a trick to share. I can't remember where I read it but a good way to make the jam firm and smooth on top, is to mix it with some jelly powder dissolved in water. It can be finicky if you're making a large batch though, because the mixture can solidify rather quickly. If it does, just melt it again to a pouring consistency.



You may sprinkle icing sugar on the cookies before filling in. I didn't, because I think they will mess up anyway when you pack them up.

Teddy Bear Cookies

I've been wanting to make these for ages. I saw them on on Pinterest and other sites and I thought my kid would love to have them (and make them with me).


The ones I saw, however, used icing for the eyes and mouth. I wasn't in the mood of making royal icing. So I thought I'd just use the dough for decoration. That way, I wouldn't have to make any icing and there's no time wasted in waiting for the icing to set. What a splendid idea! (So I thought to myself)

You can invert the colours so that you have some teddies with white face and chocolate ears and some with chocolate face and white ears, as show in the picture below.

Orange Poppy Seed Cookies

I wanted to make something for colleagues of mine and my husband's. Aidilfitri celebrations were hardly over so ordinary cookies wouldn't do. I wanted to make something slightly unusual (by local standards at least), yet nice and easy.

So here it is, Orange Poppy Seed Cookies. 




I put them in a cookie tin which came from a particular hotel...




I got the recipe from Simply Recipes and a good one it is! Here it is, in my own format. I hope those who had them enjoyed eating them and those who try to bake them enjoy making them.

Traditional Peanut Cookies

The festive seasons is far from over. Christmas may have passed but Chinese New Year is just around the corner and can't seem to wait to burst.

I don't usually make Chinese New Year goodies as most of them require a lot of hot oil and frying. However, these old-fashioned cookies are lovely and are my nephew's favourite. This recipe produces delicious melt-in-the-mouth cookies.





Making these cookies isn't difficult, really. The only tedious part is removing the skin from the roasted peanuts. If you do not live in an apartment, however, you could rub the nuts and blow the skin away. Do this outdoors, or course. That's how my mom used to do it.

Also, if you're roasting the nuts yourself, remember to measure out more than the required quantity and they will lose weight upon roasting.


Another tip: you may add the quantity of the flour or oil to adjust the dough consistency. If it is too wet and soft, add more flour. If it is too dry, add a little more oil. Simple.

Christmas Baking

I remember the smell of my mom's kitchen when we were baking cookies for Christmas. Andy Williams, Karen Carpenter or Boney M could be heard while we were rolling and pressing. Those were the good old days.

Nowadays, I have a small kitchen and a tiny oven. But I still love baking for Christmas. And my 3-year-old daughter seems to enjoy it too.

Here are some snapshots of the Christmas goodies I made in my lil' kitchen.

I became a busy mummy after giving birth at 2010. So, no baking for Christmas. Or least no photos, until last year. Here's what I made.

Henna Art Cookies

Henna painting and baking are both my passion. I finally merged the two to produce these artful cookies.
 
My daughter loved them. She admires the designs first before trying to lick the icing off!
 
 
These are basically chocolate sugar cookies and royal icing. Cocoa powder is added to the icing to make the "henna paint".
